Shou processing involves the application of heat and moisture, as well as the inoculation of the tea leaves with beneficial bacteria. It takes about a year for harvested tea leaves to become ‘ripened’ or ‘finished’ this is reflected in an earthy flavor and aroma, with a dark, rich liquor, this Puerh is said to light up your day with a sweet and thick liquor that tastes of camphor, mushrooms and black sugar a surprisingly uplifting tea though one still feels grounded. It is great in the afternoon or early evening, helping transition from day to night.
